We are just finishing up new ribs and are looking for recommendations on a varnish to use to seal them before covering with ply and Ceconite. Any help would be appreciated ...

I use Epoxy varnish on all wood. You can get it pretty much from all aircraft supply houses. 
It is the only thing that will not lift from the covering chemicals.
