"Stits Epoxy Varnish" has our vote as well.
We (Air Zoo) restored a 1943 vintage Howard-Built PT-23 and used Stits products exclusively for all applications.
Regular "Spar" varnish or un-catalyzed polyurethane varnish is not impervious to dope or lacquer based finishes.
If you were to utilize polyurethane varnish (on stringers for example) when you cover the aircraft and dope it, the dope will later eat through the varnish, rendering those areas totally unprotected. This particular dilemma usually goes unnoticed until many years later, or when performing a recover. It is at that point where dry-rot might rear it's ugly head.
Inside the center section, wing and tail feathers, a person could use hardware-store quality spar varnish with no worries.

Any good marine of polyurethane varnish will do. They cost a lot less than
the varnish from aircraft spruce.
